According to the survey carried out by the CNN, based on data provided by the National Agency of Petroleum, Natural Gas and Biofuels (ANP), the increase in cooking gas was 23,2% in the last 12 months alone, between March 2021 and 2022. released by the Brazilian Institute of Geography and Statistics (IBGE), the total accumulated inflation in the last year, which has already reached 10,54%, is still not enough to reach the high of the gas cylinder.

For Fábio Neves, economist and professor at Unicamp, in general, the price of a gas cylinder will correspond to a good portion of the monthly expenses of the entire Brazilian population.

“If we consider, the famous P-13, which is the price of cooking gas, is between R$ 100 and R$ 130. Therefore, the Brazilian who has an average income of R$ 2 thousand will have 5% to 7,5% of the income committed to the gas cylinder”, he said. In addition, the economist highlighted: "It is a significant amount because we have to remember that there are costs with electricity, food, transportation, among many other things".

In this sense, the commercial sector of restaurants has already been taking precautions against the consequences of the readjustment in the price of gas cylinders. According to Paulo Solmucci, the executive president of the Brazilian Association of Bars and Restaurants (Abrasel), the enterprises in the food sector will add this increase to the amounts that will be passed on to the customer.

“Energy, rent, fuel and now gas, which is a basic input for anyone who deals with food preparation. It is unlikely that this increase will stop on the menu”, declared Solmucci.

According to Fábio Neves, the substitution effect can be present in this context. This will most likely happen when the Brazilian population chooses to give up some items or reduce the frequency with which they normally use the gas cylinder. The economist reiterates: “One possibility is to use less. Do not make foods that require a lot of time to prepare, such as cake, for example, which consumes a lot of gas over time. Use in a more rational way to last longer in the residence”.

In the case of bars and restaurants, the options are to reduce the profit margin, bet that the customer will assume the increase in the bill, or change their gas cylinder suppliers. “Sectors such as restaurants should look for other suppliers to maintain the same price and not give up the profit margin, which will reduce significantly. Or the opposite of that, which would be to transfer in full. It remains to be seen whether the customer is willing to pay”, concludes Fábio Neves.
