According to the Brazilian Consumer Defense Association, known as Proteste, a study titled “Is There Alcohol In Your Loaf Of Bread?” revealed that six of the ten best-selling bread brands in Brazil have alcohol levels higher than expected.
This finding raises concerns about the potential health risks, especially for children, breastfeeding mothers, and pregnant women, who may be exposed to the risk of fetal alcohol syndrome.

The Tested Brands
The research analyzed the following brands: Visconti, Bauducco, Wickbold 5 Zeros, Wickbold Gluten-Free, Wickbold Light, Panco, Seven Boys, Wickbold, Plusvita, and Pullman.
According to the report, six of these brands exceed the allowed alcohol levels for non-alcoholic beverages in Brazil. If they were beverages, these brands would be considered alcoholic due to ethanol content above 0.5%.

- Wickbold 5 Zeros: 0.89%
- Wickbold Gluten-Free: 0.66%

The brands Plusvita and Pullman were the only ones that passed all tests.
Impacts Of Loaf Of Bread On Traffic
Proteste warns that consuming just two slices of bread from some of these brands can result in a positive reading on the breathalyzer test.
The State Department of Transit of Rio Grande do Sul (Detran-RS) states that the levels must be below 3.3g of alcohol to avoid an infraction. The high alcohol levels in bread result from the excessive use of preservatives to prevent mold and maintain the integrity of the product.
Health Risks Due To Alcohol
In addition to legal issues, there are significant health concerns. According to European pediatric guidelines, the threshold value for the presence of alcohol in herbal medicines, without a warning, is 6 mg per kilogram of body weight for children.
Henrique Lian, executive director of Proteste, highlights the lack of information for consumers as one of the biggest problems. He argues that products should contain warnings about the presence of alcohol on their packaging, something that is not currently happening.
Due to this finding, Proteste claims to have sent a letter to the Ministry of Agriculture, Livestock, and Supply (Mapa) and the National Health Surveillance Agency (Anvisa), suggesting the implementation of a maximum alcohol percentage of 0.5% and the monitoring of preservative and alcohol levels.
In a statement, both Wickbold and Seven Boys and Panco and Bauducco and Visconti said they follow safety and quality protocols and that they have not yet been notified about the study and cannot comment without knowing the methodology.

According to the Brazilian Traffic Code (CTB), driving under the influence of any amount of alcohol is a serious infraction, and the consumption of foods with high alcohol levels can potentially lead to severe penalties. The penalties are as follows:
