Blind tasting with eight brands focused on flavor, aroma, texture, salt, and appearance in the evaluation conducted by chefs and specialists

The canned sardine gained prominence in a gastronomic evaluation conducted by specialists. The analysis put eight brands found in supermarkets and stores head-to-head, focusing on flavor, texture, aroma, and appearance.

The traditional Portuguese brand Ramirez came in first place after the blind tasting. The result drew attention because the evaluation considered only the characteristics of the product served, without the influence of labels, packaging, or well-known brands.

Technical tasting evaluated flavor, texture, and appearance

Group of chefs and specialists gathered in a gastronomic environment during a technical evaluation of canned sardines in a blind test conducted with brands found in supermarkets.
Chefs and specialists participated in a blind tasting to evaluate flavor, texture, aroma, and appearance of canned sardine brands sold in the market.

The test gathered products purchased at retail, without prior notice to the evaluated brands. All samples were served without identification, in the model known as blind tasting.

The judges analyzed firmness of the meat, oil residues, aroma, flavor intensity, salt balance, and visual aspect. The integrity of the fish inside the packaging and the presence of scales also weighed in the final classification.

Chefs and specialists participated in the evaluation

The jury included chefs Alexandre Park, from PoPa Artesanal, Marcelo Corrêa Bastos, from Sororoca, Vitor Sobral, from Tasca da Esquina, and specialist Thaís Martinho.

Each participant recorded individual impressions on flavor, aroma, texture, and presentation of the sardines. The observations were later compiled to form the final ranking.

Ramirez reached the top of the ranking

The Portuguese brand Ramirez led the evaluation among all canned sardines analyzed. Experts highlighted the pleasant texture, mild aroma, and delicate flavor of the product.

The shiny appearance and preserved meat were also pointed out as important differentials. The balance of salt reinforced the brand’s position at the top of the list.

Coqueiro and Pescador follow in sequence

Coqueiro came in second place, after receiving praise for its firm texture, neutral aroma, and good visual presentation.

Pescador occupied the third position, with emphasis on the balanced flavor and the intact appearance of the sardines.

Other evaluated brands had inconsistent performance. Some pleased with their aroma or texture, while others lost points for excess residues, slight bitterness, or low flavor intensity.

Canned sardines remain strong in daily consumption

Canned sardines continue to be present in quick recipes, such as sandwiches, pasta, salads, and pies. The food also attracts attention for its nutritional value and association with omega-3 consumption.

The evaluation result reinforces that flavor, texture, and appearance can weigh as much as practicality. Small details, therefore, can directly influence the consumer’s choice at the supermarket.

Would you choose a canned sardine by price, brand, or the result of a tasting conducted by experts?
