Launched in February 2024 at Azabudai Hills Garden Plaza, MATTE Bottega del Cioccolato gained notoriety with Corteccia, a dessert inspired by Italian chocolates, rolled like a branch and produced by a machine specially created to achieve a layer of only 0.03 millimeters.

The chocolate produced by MATTE Bottega del Cioccolato caught attention in Tokyo for an unusual feature: its layer measures only 0.03 millimeters. The creation, called Corteccia, aims to offer a texture that melts immediately in the mouth.

Corteccia Chocolate was born from an exclusive machine

MATTE was inaugurated in February 2024 at Azabudai Hills Garden Plaza. The well-known product received the Italian name Corteccia, a word that means “tree bark.”

The dessert is formed by a single ultra-thin layer of chocolate, pressed and rolled by a machine developed for the store. The equipment took a year and a half to be ready and involved the collaboration of a local specialist.

Although similar machines exist elsewhere, none can produce a sheet with the same thickness. Therefore, the process used at MATTE’s workshop is difficult to reproduce outside the establishment.

Shape imitates branch covered by bark

After being pressed, the layer is rolled until it acquires a cylindrical appearance. The result resembles an irregular branch, covered by a surface similar to tree bark, a reference to the chosen name.

The idea came from founder Matteo Sanclicca, who wanted to create a dessert with a different melting sensation. The reduced thickness allows the chocolate to begin disappearing as soon as it touches the tongue.

Inspired by layered Italian chocolates, Corteccia went viral on social media and sparked attempts at reproduction. So far, however, the combination of thickness, shape, and exclusive equipment remains associated with MATTE’s workshop in Tokyo.
