Initiatives of Epamig Expand Research on Cachaça, Strengthening Cachaça Production in Minas Gerais with Actions for Quality, Professional Training and Technological Development in the Sector
The production of cachaça in Minas Gerais enters a new phase with the implementation of a state program that brings together agricultural, technological and environmental research, aligned with the goal of improving every link in the production chain, according to an article published.
The movement arises at a strategic moment, as the state, while being the largest national producer of the beverage, still faces gaps in information regarding manufacturing volume, classification of enterprises, conducting laboratory analyses and technical assistance.
The advancement announced by the Empresa de Pesquisa Agropecuária de Minas Gerais (Epamig) aims to fill these gaps, offering pathways to improve processes, qualify producers and enhance regional characteristics of the beverage, which is already recognized for its tradition and cultural impact on the micro-regions of Minas Gerais.

The research fronts related to the raw material are directly linked to the production of cachaça in Minas Gerais, involving the selection of cultivars suitable for the different biomes of the state.
The focus includes practices of phytotechnical and ecophysiological management capable of increasing productive efficiency and ensuring sustainability.
Epamig intends to evaluate characteristics of productivity, resistance and adaptation, maintaining the proposal for integration between field and industry.
These actions serve as a basis to guide producers about up-to-date techniques, enhancing the consistency of results and promoting alignment with quality standards.
Minas Gerais Still Cachaça and Advanced Fermentation Processes
The production of cachaça in Minas Gerais is associated with the choice of microorganisms and the optimization of fermentation procedures, fundamental to standardize and improve the beverage.
Research on aging is also part of the program, involving analysis of different woods, barrels and storage periods.
These stages add physical-chemical and sensory value, directly influencing the commercial potential of the beverage.
Additionally, the sector gains momentum with investigations on products derived from cane and cachaça itself, opening up space for diversification and encouraging the adoption of innovative technologies.
Territorial Identity of Terroirs and Technical Training for Producers
The development of territorial identity, associated with the production of cachaça in Minas Gerais, appears in the fifth block of the program, highlighting actions that seek to differentiate regions by their environmental and cultural characteristics.
At the same time, the implementation of the School Still emerges as a response to the lack of technical guidance, as 40% of the establishments evaluated in the state diagnosis of 2023 do not receive specialized support.
The unit will offer practical training and continuous monitoring, strengthening producers’ skills and paving the way for competitiveness gains.
The initiative is reinforced by the partnership between Epamig and Emater-MG, aligned with the State’s guidelines.
The production of cachaça in Minas Gerais remains a national reference and, with the expansion of this research, gains new foundations to advance in innovation, sustainability and regional appreciation.
